Chili-Cheese Black Bean Enchiladas - Kid Friendly

I made these for dinner tonight and my husband, the carnivore, raved

about them. He just loved them and they are so easy. I sure liked

them, too. They look soprofessional with the cheese melted over the

top. It wont be Cinco De Mio next year before I make these again.
