I have a few good recipes if anyone would like me to share. I havent looked in the files here to see if there are any there. I have been Vegan for a couple of months and have avoided cheese substitutes since I've heard rarely anything good about them. I don't eat soy, so if you have a recipe for ricatta that doesn't use soy, I would be so very grateful.
