Hummus Question

I have had hummus made with blackbeans but wasn't really big on it. You could make it out of any type of bean though. Just experiment to see what you like best.

I've had it with soy beans and wasn't too thrilled with it. Soybeans have a

VERY strong flavor.

I have had other bean dips made with great nothern beans or white navy beans. I would give those a whirl. Bad food processor joke. LOL :)

Butter beans (yellow, large lima beans, kwim?) work well.

I have seen hummus in the stores here made of soybeans. I suppose

you could try this as well.

I've joined the Meatout Monday group, and have been enjoying the recipes and

info. I just received this and found it interesting enough to share:

 

Burgers are as Addictive as Heroin

By Bill Hoffmann, From the New York Post, July 14, 2003 -- A hamburger and

fries can be just as addictive as cigarettes and even hard drugs, a

surprising new study claims.

Scientists at the University of Wisconsin say high doses of fat and sugar in

fast and processed foods act the same way as nicotine, heroin and other

substances in becoming habit-forming.

" A high-fat diet alters brain biochemistry with effects similar to those in

powerful opiates such as morphine, " lead researcher Matthew Will told a

British television documentary.

In Will's research - detailed in the documentary " Big Mac Under Attack, "

which airs in Britain tomorrow - he fed a group of lab rats high-fat diets

and discovered that when the fat was taken away, the rodents displayed

withdrawal symptoms similar to those of a drug addict denied a fix.

He also found that a steady diet of fat alters the development of the brain

so much that it is almost impossible for a fast-food " junkie " to switch to a

healthy diet.

The research was also reported in yesterday's Sunday Times of London.

Lawyers have launched a series of high-profile lawsuits against fast-food

chains, claiming that they have misrepresented the effects of their

products - and the new research is sure to add to the debate.

Hi Hilary,

Hummus lasts about a week in the refrigerator; there should be an

expiration date on the container. While it is usually used as a dip,

I spread it on bread with sliced tomato and onion for a yummy

sandwich.

We have a couple of recipes for hummus in the Files section too, for those

who just don't happen to have a 'can of hummus' on hand ;=) It's easy - and

btw it freezes nicely so that I make enough to last a couple of weeks or so -

different recipes for different uses too. We don't use it as a dip at all here -

well, maybe once a year or so *lol* - but we do use it in sandwiches and as a

light spread instead of margarine or butter on bread with, say, chilli.

There's a great idea right on the inside lid of my hummus container.

Spread the hummus on a tortilla or lavash bread. Then add chopped up

veggies. Roll it up, slice and eat. The hummus keeps the small veggies

from falling out. This should work with pita bread too, I would think.

I always remove the fibrous skin from (cooked or canned) chickpeas and find

that my hummus is much smoother. Otherwise, the only solution is to get a

better food processor. ;) I take it you've tried adding more water, lemon

juice, tahini, and/or olive oil?

You do cook the beans first, right, before mashing them? Until very, very

soft?

 

Otherwise, I would use a bean/grain grinder to make flour first (and realize

that you will have more of a " gas problem " this way, as none of the

undigestible carbs are removed, as they are with cooking).

You have to cook them.

 

Then you sit down and go through the bowl, popping the skins off one by one.

The skins go into the compost pile.

Can hummus be frozen? I'd like to put small amounts in the freezer

when I make a larger quantity since I'm the only hummus lover in our

household. Thanks for your advice.

vicodin and naproxen for low back pain plus

a tendency to attempt to read things faster

than I should leads to entertaining moments.

 

What I thought I read:

Many thanks for the LOL Gary; I needed one today. I would think,

though, that freezing humans in whatever amount would lead to

inconvenient visits from various law enforcement bodies ;)
