I must say that I KNOW NOTHING about being a vegetarian except that I believe that I will be HEALTHIER for it. I come from a long line of " meat eaters " having been raised in a rural south Texas town where every summer we would butcher a calf or two so that we would have meat for the winter. So now I am grown, am 49 years old and am on a ton of medicine because I have such severe acid reflux that my GI doc says I also have Barrett's Esophagus. For those of you who are unfamiliar w/the term, it is high possibility of precancerious membrane in the esophagus. So, am trying to seek out things that will keep me alive just a little while longer. My first really dumb(I think) question is: On veggies, I usually don't have time to have raw or fresh all the time. But I've also heard that cooking them takes all the nutrients out of them. What is the best way to eat veggies? Plus, I'm not/never been a real big fan of veggies, so will have to work my way into this veggie thing. And, what else can I eat? I am sure that the group have lists of foods/recipes etc to look at. I just purchased my first juicer and have no clue how to make anything. What is the best way to eat veggies? Well, for me, raw has been the quickest and easiest way. I'm a SAHM with four little boys, so there's not a lot of free time around here! Easy to eat fruits (that do not require much preparation) like apples, oranges, bananas and grapes, and vegetables such as bell pepper and cucumber have become staples. You can find baby carrotts, broccoli, and other veggies already washed, cut and bagged in your produce section. The other day, I also noticed packages of cut celery, carrots and bell pepper put together. Maybe something like this would help you out? As I understand it, steaming is the best way to cook vegetables. Cooking them in water is what sucks the nutrients out of them. Buy a steaming basket at wal-mart, or even steam them in the microwave (cover a microwave safe bowl w/plastic wrap and punch a few holes). We have never been big vegetable fans either, but I have noticed that our tastes are changing. Just keep eating what's good for you and pretty soon that is what you will want to eat. I guess it just takes time for our taste buds to adjust! Don't forget beans, legumes and whole grain items such as breads, pastas and rice. Read your labels! We eat no meat, but we still eat fish, occasionally, especially salmon. I have been juicing twice a day....for breakfast and lunch and then a low fat vegetarian dinner. Try some. Some you will like.... Some you won't. We usually have garlic, celery, cukes, kale, carrots, and an apple. We have tried other combinations, but usually come back to these.
