Guest guest Posted May 12, 2007 Report Share Posted May 12, 2007 Veggie kabobs 2 medium zucchini 3 large carrots 1 medium onion 8 large mushrooms Soy sauce 2 cloves garlic Melted butter Peel carrots, cut into 1 inch pieces, boil until outside can be pierced with a fork, but still slightly firm. Mash garlic and place in bowl with soy sauce mixed with water to taste. Cut zucchini in 1 " pieces. Quarter onions, then cut each quarter into 2 wedges; don't separate. Trim dead ends off of mushrooms. Place on skewers, alternating pieces as you like. Brush with soy sauce marinade, cover with plastic wrap and let sit for about an hour. Add melted butter to soy sauce marinade and brush over kabobs. Place on lightly greased grill about 6 " from coals. Turn in about 5 minutes and baste again. Turn after a few minutes, baste. Continue grilling and turning until veggies are as done as you like them. *This is my adaptation of several recipes, with my personal choice in veggies. To make this into teriyaki kabobs, add some fresh ginger and sugar to the marinade. The amount of soy sauce is not given because I never measure it! This marinade can be thickened in a saucepan with the addition of a tbsp. of cornstarch. Remove garlic and ginger, if used before passing the sauce.
