Plain old graham crackers and your favorite frosting mix any flavor. Add a little peanut butter to the frosting mix or fill the 'cookies' with a mixture of peanut butter and honey/jam. My kids loved nut butters mixed with jelly or preserves. I let them do the mixing and then spread a thin layer on the graham cracker..Top with the second cracker and you have a perfect , healthy 'cookie'. We didn't have gelatin free marshmallow cream when the kids were little or we would have used that. Layer marshmallow cream and peanut butter for another great filling.
