My Rachel Ray cookbook has a good recipe for eggplant rollups, with herbed cream cheese, basil and argula (I think, don't have the recipe in front of me). I'm going to try that next time and will post once its TNT. We also had some baked beans (DH makes the best baked beans on the grill) and coleslaw (he makes the dressing with some mayo and Raspberry Balsamic vinegar).
