My husband and I have been vegetarians since Jan of this year and loving it. My daughter is a vegan and just graduated with her Masters from college and would like a vegan graduation party. The guest list is very varied with meat eaters as well as her vegan friends and I would like to be able to serve some things everyone would enjoy while still keeping it vegan. Sure could use some ideas for this. So far there will be 40 people in attendance. Thanking you in advance for any help you can offer. Things like hummus or similar spreads with cut veggies or crackers. You can also do a deli tray with faux meat slices or even bread and condiments for sandwiches. You need a smoothie maker/liquidiser, soya milk and fruit. Put the milk and fruit in the smoothie maker/liquidiser turn it on for 30 seconds (or until the fruit is chopped up small), pour it out and drink! Told you it was easy! Whoever suggested Hummus - that's a great idea! I've become a huge fan recently and setting this out with a nice flat bread or tortilla would be good, along with fresh fruits and veggies. Also baked goods can be just as good using substitutions for egg and soymilk (you can use recipes you already have). If you need ideas for egg substitutions there are plenty on the net or I'm sure people here can make suggestions (apple sauce, flax seed, bananas, EnerG (or however it is), etc.). And you could make muffins and cookies of any sort - I have a couple of muffin recipes that are quite excellent from a Vegan cookbook for blueberry banana and apple cinnamon, if you're interested. Zuccini brownies are really great, pumpkin bread is a personal favorite. Smart dogs done as 'pigs in a blanket' work out pretty well. If you wanted a dinner type dish, a Vegan chili might be a good option. If you want a quick one, Fantastic Foods puts out one that tastes very good and chili's often good hot or cold! Also, making up some sort of black bean dish would be good. You could do a potato skins type appetizer, with salsa as a topping. It was FANTASTIC....Here it is again incase you missed it and want it.. Stephanie I made the vanilla frosting and added a few drops of food coloring to make it pink. The first time I made the frosting, I let the margarine get too warm before I added it and the frosting never set up just stayed runny. Second time around, I took the margarine (earth balance) out of the fridge about 2 minutes before adding it. I used a pastry cutter to cut in the powdered sugar to the margarine. I was careful about not over blending it also. Turned out great! And the cake...the best vegan or not that I've had! Crazy Chocolate Cake (from vegan connection) Absolutely one of the best cakes I've ever had. 3 cups flour 2 cups sugar 2 t. baking soda 1 t. salt 1/2 cup cocoa 3/4 cup oil 1 t. vanilla 2 T. vinegar 2 cups water Mix the dry ingredients and then add the wet ones, and mix until smooth. Prepare pan(s) by greasing and flouring lightly. Pour into 24 cupcake pans, two 9-inch pans, or one 9X11-inch pan. Bake at 350 degrees for approximately 20-25 minutes (cupcakes), 30 minutes (9-inch) or 50 minutes (9X11). Test with a toothpick to make sure it is done all the way through. Cool. Ice with favorite frosting. Vegan Chocolate Frosting (from vegweb) Ingredients (use vegan versions): 1 cup margarine 4 cups confectioners sugar 2 tablespoon vanilla 4 tablespoon soy or rice milk (I used rice milk) 1/2 cup cocoa powder dash of salt Directions: Margarine should be at room temperature (I took out of the fridge for 2 minutes) when being placed in bowl. Blend until mushy, and then add vegan powdered sugar, salt, vanilla, chocolate and soymilk. You can add in more soymilk to make it a bit smoother but not too much. Spread on cake and enjoy. NOTE: replace cocoa with 1/2 cup powdered sugar for vanilla frosting and use a bit less milk Give spam the boot. Take control with tough spam protection in the all-new Mail Beta. We are a family of four (and a half, if you count the one on the way!) Do you plan to have a meal or do more of an appetizer type thing. Personally, I always prefer the appetizers since it makes it pretty easy to offer a variety of things. we tend to have these type of foods... fresh veggies and some dip.... savory sauce is great (donna's recipe is in the files.. I think my version is too.. it is a little different from Donna's) ... and you can even make easy dips by using either soy mayo, tofutti sour cream or simply tofu whipped up with dry soup mix. Lipton onion, onion mushroom and vegetable are all vegan... actually.. check out Peta's accidentally vegan list of foods that are mainstream foods and happen to be vegan. This link is in our links section... but i'll add it here too... http://www.peta.org/accidentallyVegan/ We do chips and salsa and guacamole. (always a hit.) you can have chili in a crock pot to make nachos.. or even offer bean dip. Hummus. homemade or store bought. I made a edamame hummus once.. it was surprisingly good and a hit with everyone. edamame is always good. I like to have other finger foods... spinach tofu pockets are great... I scramble up some tofu with onions, garlic, spinach and make pockets out of biscuit dough.. although filo dough is also a good treat. small pizzas are tasty brushetta is always good finger food. the bread can be used with the hummus. what sort of foods do you want to have.. or would you normally make for a party.. Let me know and I bet I can veganize just about anything you through at me ... or I'll try to think of something similiar that might work.
