IF it is possaible, can everyone post a full week ( 7 days) of suppers? I know that would take some time, but I think it would help not only me, but all of the other newbies and offer some different idea's for everyone else. As someone that is still in her first years of going veg, I find it hard to come up with different idea's for a full supper. Any one up for the challange? If the things you use are in the file section, then thats all you would have to say. if not, add the recipe. Thanks in advance! Guest guest Posted May 17, 2007 Report Share Posted May 17, 2007 Susan: I am no gourmet chef, and I do not have recipes handy for all of these, but just to give you an idea, here are some of our usual suspects for dinner (bear in mind that I have little kids, so that is why these tend to be a little kid-like): sloppy joes using a can of manwich and veggie crumbles veggie hot dogs with tater tots portobello mushroom po'boys veggie meatball parmesan subs pasta with broccoli raab and cannellini beans cheese lasagna or baked ziti pasta with uncooked tomatoes and cheese black beans and rice porcini mushroom risotto penne with potatoes, tomatoes and cannellini beans vegetarian chili As you can see, most of this is simple. That way we would have a year of menus. Guest guest Posted May 17, 2007 Report Share Posted May 17, 2007 Don't you have a vegetarian cookbook? You can get them used for a quarter at good will or other thrift stores. Those will give you lots of ideas. You will probably have an easier time when you get over the idea that was planted in your head when you were young that all meals have to have certain things. I make one dish meals. As long as they are ballanced nutritious meals you don't have to have 4 or 5 seperate dishes on the table. When you get adventuresome in the kitchen you will probably learn to make many of your old favorites in a new meatless way. I don't trust soy products, so I don't use packaged meat substitutes or dehydrated vegetable protein. I make things like eggplant parmeasn or spaghetti with sauce and sprinkle black beans over the top. Vegetable enchiladas are a hit any time. I make zucchini lasagna and chinese stir-fry. I make vegiball sandwiches with balls made from eggplant and bread crumbs and beans. Red beans and rice is a favorite as is vegetable soup. Durring the summer salads are great. I have several salad recipies that are based on rice that are served chilled or at room temperature so you dont' heat up the house. A non-gelatine jello mold with thinly sliced or jullienned carrots and zucchini and radishes with small chunks of cauliflower is good, too. When I start feeling I want something more substantial I make seitan steak with mushroom sauce over rice or a portabella steak with mashed potatoes and gravy. Katie Shape in your own image. Although they make some yummy dinners. I suggest you go to your library and check all the vegetarian/ vegan books out. Many of them talk about complete meals, getting your vitamins and educate well. I have kids and it is baseball seasonso this week our meals look like this: Monday: Vegetarian Meatball Subs with Salad Tuesday: Baked Ziti with Broccoli Wednesay: Hoppin' John with Beets Thursday: English Muffin Pizzas with Salad Friday: Quorn Chicken with Baked Potato Saturday: Leftover day (AKA make out next weeks list since there is no food in the fridge) Food fight? Add to that a limited tolerance for beans and soy (I know I can eat these once a week, but more than twice and my body sometimes complains) and that I've been a picky eater for almost fifty years. That said, we came up with a template for a week that runs something like this: one cheesy dish, one fake meat dish, one bean dish, one big salad, and pasta every Monday night when I have band rehearsals and no brains. :-) " Leftovers " is a favorite meal around here for some reason. I don't always prepare all of these each week and sometimes I cook two of one and none of another, but it is nice to have a starting point instead of looking at a blank page. Last week, we had tortellinis with tomato sauce, buffalo chik'n salad with blue cheese, pasta fagioli, cheese enchiladas, and chik'n strips piccata (which husband wanted to try making). The week before that, we had vegetable lasagna (prepackaged, frozen, left over from a friend's party), chili, basmati pilaf, and Angry Red Lentil Tortilla Soup, plus we ate out twice because DMIL was in town and wanted to take us out. I keep a log (most weeks) of what we've had with notes when we love or hate something. Some days I'm a bear of very little brain and can't remember what I ate the day before, so these notes can save me from drawing a complete blank OR serving the exact same stuff every week. -ginger north of Boston where it feels like March - grrrr! Guest guest Posted May 21, 2007 Report Share Posted May 21, 2007 Kale (fresh from garden) potato and navy bean soup with a salad, sliced baguette and cheese on the side Vegetable dumplings (from freezer) and steamed artichokes (from garden) with a bowl of seitan stew (from freezer) Black bean soup (freshly made but there will be some leftover for freezing later) and tabouli with parsley and tomatoes from the garden. Vegetarian paella (with baby lima beans and assorted vegetables – from freezer, leftover from the last paella party) and a big salad on the side (all greens from the garden). Veggie refried Bean (from a can) and Yves ground round soft bean tacos with tomatoes and shredded kale (from garden) and salsa Grilled seitan in chimichurri (froze it from the last grilling occasion) with grilled vegetables and red rice on the side. Pan fried firm tofu squares served with Indonesian peanut sauce (from asian market, just add boiling water) with brown rice and of course a salad from the garden. Lavash roll sandwiches with spinach, nasturtiums, kale, tomatoes, cucumbers, olive tapenade and feta cheese. Can add anything here, fake meats, olives, etc....Spread big sheet of flat bread, sprinkle ingredients on top, and roll it tight. Cut it into smaller rolls, they look svery nice too. OK, this is more or less the last few dinners I remember us having. We eat based on whatever the garden is producing, and expand the meal with whatever might be in the freezer. If we have time we make fresh of course, usually lots more than we can eat, so some goes in the freezer again for those less inspired ocasions..... Other acceptable good dinners that do not take much time: veggie burgers and salad fixings Pasta and a nice sauce with a salad on the side I like to make miso soup and add dried mushrooms, carrots, scallions, other veggies, and tofu.
