I have been doing really well on the vegan plan but a few days ago...I had an intense craving for red meat. I tried to ignore it but finally gave in and had a hamburger, nothing huge and it was homemade (not fast food). I am guessing that since I am borderline anemic and haven't been taking my vits (shame on me)...that I just needed some iron (?)...anyway, my blood sugars had been running absolutely STEADY in the mid 100's (not perfect but way better than where they were). Since I ate that hamburger...my sugars jumped back up to 550 !!! They are slowly coming back down. Could just one serving of meat do that?! I don't know but no other factors have been different. When I feed him my bean and veggie stew [he calls it " glop " ] his blood sugar drops immensely. When I do not feed him that kind of vegan food, his blood sugar is much higher. He is not a vegetarian, but I am so I occasionally cook meat for him. Glop seems to be the best food for him. I don't ever get the urge to eat meat, but this is a good warning to keep me away from dairy. :-) I also find my numbers to be steady at around 100. But when I have a day of more fruit than I should, it tends to climb up to 140 or so and takes awhile to come back down. I like your description of glop, Kathleen. I eat a _lot_ of that! Then up it goes, I read that fat- whatever the kind will raise your blood sugar and keep it up for a while. I really need to stop the cheese.
