Meatless Meatballs

Does anyone have a really good way to make meatless meatballs? I

looked in the files and didn't see any, or I just over looked it. Is

there a way to use the Morning Star crumbles and make them or do they

make meatless meatballs and I just don't know it? Any ideas would be

great. Thanks and everyone have a great day.

Gimme Lean has a very good ground beef substitute that comes in a tube and has a

texture very similar to ground beef. This can be mixed with the same ingredients

from any meatball recipe.

Here is my recipe for meatless meatballs. I made these and my

husband took them for a potluck at work and all the carnivores there

ate them and even asked for the recipe.

 

1c seasoned bread crumbs

1c grated cheese (optional,tofu can be substituted here)

1med onion (sauteed in a little oil,or water)

4 eggs

1c rolled oats

1c ground nuts

2T parsley

garlic and sage to taste

 

Saute onion in water or oil. Mix all ingredients together and form

into small balls. Fry them or bake them. I usually bake them on a

sprayed baking sheet in a 350*F oven for about 20-30 minutes turning

them once. Then remove from oven and place them in a casserole dish

and cover with favorite sauce and return to oven and bake until

bubbly.

I buy meatless meatballs from Trader Joes. I once made meatball

sandwiches with them and only told my boyfriend after he at them that

they were meatless - you couldn't even tell they were meatless - they

were great.

Not homemade but I absolutely LOVE the gardenburger mama mia meatballs in the

freezer section. We use them to make meatball subs...they are simply incredible,

taste better that the " real " ones.

I use whatever we have on hand. Usually walnuts and tofu instead of

cheese. Pecans are good and either shredded cheddar or cottage

cheese will work for the cheese. They always turn out good. If the

bread crumbs are really dry you may need to add a little water or

soy milk or maybe even another egg. ~Cherie
