The dishes have to serve several people. I'd like to keep it sort of simple if I can. Any ideas would really be appreciated. I'm not much of a gourmet and I'm having to work this weekend. Thanks in advance! Robin One of my favorite quick and easy pot luck contributions is.... Corn & Black Bean Salad Can of corn drained Can of black beans drained Chopped red onion Two cloves garlic minced Sliced avocados Few dashes cumin Salt Pepper Olive oil Balsamic vinegar Mix all ingredients to taste and chill before serving. Guest guest Posted May 25, 2007 Report Share Posted May 25, 2007 this is a good one for a pot luck Kicked up Salsa Dancing Macaroni Salad 1 Box elbow macaroni cooked drained and rinsed in cold water 1 can Black beans drained and rinsed salsa mayonnaise (veganaise) 1 cup corn 3 stalks celery chopped celery salt black pepper white pepper chili powder cumin powder Paprika Mix salsa and mayo together mix macaroni, black beans, corn, and celery together add salsa mixture stir to combine add celery salt, the peppers, a touch of chili and cumin powders and the paprika mix taste to adjust seasonings.
