Our church is having a big outdoor event this coming Sunday.

It's a pot luck and since I bring so many I have to take more than one dish.

The dishes have to serve several people.

I'd like to keep it sort of simple if I can.

Any ideas would really be appreciated. I'm not much of a gourmet and I'm

having to work this weekend.

Thanks in advance!

One of my favorite quick and easy pot luck contributions is....

Corn & Black Bean Salad

Can of corn drained

Can of black beans drained

Chopped red onion

Two cloves garlic minced

Sliced avocados

Few dashes cumin

Salt

Pepper

Olive oil

Balsamic vinegar

Mix all ingredients to taste and chill before serving.

Depending on the time span between making it and serving it, the avocados

might get funky so you could leave them out.
