veggie broth?

Since I'm very new to the vegetarian thing I want to mention one of

the hardest things to give up is chicken broth. I love using it in

soups, risottos, lentils and rice. I saw a couple of recipes in here

for veg broth. They look pretty good. I plan on making it sometime.

But I'm also looking for store bought veg broth. Does anyone have any

recommendations? I tried one from Trader Joe's and it was just aweful!

It's the only one they sell unfortunately. I shop mostly at Whole

Foods and sometimes Safeway but don't know what's the best kind. Any

ideas?

I do not like the taste of any veggie broth I have ever bought....

I make my own veg-stock usign bits and pieces and ends of whatever goes

through the kitchen....it doesn't always taste great..*L* but at least I

know what's in it.....and it does the job.

I can't remember what brand I bought but I want to say it was that 365

Organics brand made for Whole Foods. I have used it many times before and

to make that soup I posted and it was quite good -

Swansons makes one that's downright awful...loaded with sugar and everything you

use it in is sweet.  Ugh!  I use Knorr veggie cubes in a lot of things...soup,

rice, lentils...so far I find them to be the best.

I have found the almost all veggie broth is horrid. I

did find some nice cubes, once...and don't recall the

name. If I run across them again, I will post.

I like Rapunzel's no salt, vegan, vegetable cubes. They are almost as good as

home made and don't take near as long. There is no offensive after taste.

We use Pacific or Imagine brands - both of which are

available " organic " certified broths, and are both quite good - but,

by far the best veggie broth is that - that you've made from your own

fresh organic veggies right from your garden! does not get much

cleaner, fresher or better than that! doc

When I am in a hurry, I simply add miso to the dish when the cooking

is over, taste for seasoning. Some of the milder misos work for

" chicken " broth and the darker ones, for " beef " broth. I also use

Spike instead of salt for adding to cooking--it has herbs in it as

well as salt. It also contains no MSG, as most of the commercial

seasoned salts do.

 

Normally, I make my own broth using vegetable peelings and vegetable

cooking water that I freeze. I cook all of this up adding onions,

garlic, and bay leaves. I make sure when I buy beets that I buy

golden beets [red beets would ruin the subtle effect] so that I can

use the slightly sweet cooking liquid for my next broth project. It

really gives white sauces and gravies a really interesting taste that

no one can figure out. Very good with curries and other Asian foods.

 

One of the best parts of becoming a vegetarian is the challenge of a

new cooking world. I am still learning and have been a veggie since

1976. These vegetarian lists have given me many good ideas.

Also,

 

Laurel's Kitchen, the vegetarian stand-by cookbook, has a non chicken

broth recipe in it that uses yellow split peas. I made it--it is great.

I've tried a couple of broths and the one I like the best so far is College Inn

brand. It runs about $1 a can and a local store has it, not a health food

store.
