Watercress Salad with Fennel and Citrus

 

The flavors of fennel and sweet oranges balance the peppery notes of the

watercress and radishes.

 

Salad:

4 cups trimmed watercress (about 1 bunch)

1 1/2 cups thinly sliced fennel bulb (about 1 small bulb)

3 navel oranges, sectioned

1/2 cup thinly sliced radishes

 

Dressing:

2 tablespoons fresh lemon juice

1 1/2 tablespoons extra-virgin olive oil

1 teaspoon Dijon mustard

1/2 teaspoon maple syrup

Dash of sea salt

Dash of freshly ground black pepper

 

To prepare salad, combine the first 4 ingredients in a bowl.

To prepare dressing, combine juice and remaining ingredients in a small bowl,

stirring with a whisk. Drizzle dressing over watercress mixture; toss gently to

coat. Yields 8 servings.

What IS watercress? Where do you get it and what does it look like?

It is a chineese vegetable and the only way I know to get it is canned at the

grocery store. If you go to china you can buy stalks of it that sort of look

like banboo, in that it is sort of sectional, but it is green and firm, not hard

and woody.

It doesn't have a lot of flavor, but has a lot of crunch and doesn't loose its

crunch when cooked.

Seems to be very nutritional.. but bummer it's from the cabbage

family..... But I would like to try it though.

The picture that was just sent to me, it looked like it was a green

or lettuce of some kind..

Watercress used to be found a lot in natural spring areas. It does have a bit

of flavor/peppery to it. Some of our grocery stores around where I live have it

(Illinois). The chain store that mostly has it is Meijhers, sometimes

SuperWalMart and sometimes Jewel.

 

The last bunch I got form the store didn't have much flavor though. Think

next time I go and before buying it (comes in little bunches like cilantro does,

etc.) I'll taste one of the leaves first to see how flavorful that bunch is.
