This one is my ginger, pear and red currant version... 8oz /225g self raising flour (or flour + baking powder)* 1 level teaspoon extra baking powder 5 oz /150g sugar* 2 eggs 5 fluid oz /150ml olive oil 2 conference pears grated 2 tablespoons powdered ginger 4 oz /100g red currants 2 oz /50g chopped walnuts *If you want to use wholemeal flour do so, but replace the sugar with the same weight of honey. This balances the liquid ratio in the mix. I am working on a fully vegan olive oil cake at the moment. Oz are weight, unless stated as fluid oz. Put all ingredients into a large bowl and give it a good stir by hand until well mixed. It will look quite runny - don't panic! Pour into 8 inch round baking tin, and cook in a pre-heated oven 180 C/ 350F / Gas mark 4, for 45 - 50 minutes until a skewer comes out clean. Add frosting or other topping if desired. Sit back and enjoy! I am going to make my new vegan recipe tonight to see how it turns out, picture on the blog tomorrow, if all goes well...
