Hello Folks... Here is the recipe Doc says is " To Die For " - It is

very good....

 

Here's what I use:

 

3 organic eggs

1 C. Spectrum Organics Walnut Oil (use Canola oil or Organic

Applesauce if you wish)

1 C. Organic Brown Sugar

1 C. Organic Unrefined Sugar

2 C. Peeled and grated Organic ZUCCHINI

3 tsp. Organic Vanilla or cold coffee (leftover from breakfast)

2 tsp. organic cinnamon

1/2 C. Pineapple (cut up into little tiny bits)

3 C. Organic Flour (I use spelt for nutritional reasons)

1 tsp. Baking Soda

1 tsp. Organic Sea Salt

1/4 tsp. Organic Aluminum Free Baking Powder

 

This recipe makes two 9x5 loaves or two 8x8 cakes.

 

I use oil (the same kind in the loaves) and SUGAR to prepare my

pans... Try the sugar.... It makes a wonderful crunchy coating...

instead of the usual flour.

 

Anyway...

 

Whisk together eggs and oil, add sugars and mix, add zucchini,

pineapple and vanilla (or coffee) and mix....

 

In a separate bowl... sift together your dry ingredients.

 

Mix dry ingredients into wet ingredients and mix well.

 

Pour into two pans and bake at 350 degrees for about 40-50 minutes

ifyou're using cake pans or about 55-60 minutes if you're using loaf

pans. You know the drill... stick a toothpick in there and see if it

comes out clean. (also an indicator of when it's done... it starts

to pull away from the sides of the pan... and oh yeah! You can smell

it and it is wonderful!
