Pickled Radish Greens

Radish greens are delish! If you have been tossing

them, STOP!

They cook up fast and they are tasty.

Pickled Radish Greens

 

1 large bunch radish greens or 2 small bunches

1 - 2 teaspoons salt

1 teaspoon sugar

1/2 cup water

soy sauce, to taste

sesame seeds (toasted)

 

Wash greens, discarding any bits that don't look

fresh. Chop coarsely. Combine in a bowl with the salt,

sugar and water. Allow to sit 30 minutes to several

hours in the refrigerator. Just before serving, drain

and squeeze dry in a kitchen towel. Place in small

serving bowl and add soy sauce to taste and sprinkle

with sesame seeds.

Serves 6.

I'm always amazed at the things you find to eat. You are truly an adventurous

enjoyer of such a variety of foods that I have never thought of tring.

 

Next time I buy my radishes I'll have to look for some that still have their

tops.

 

I have a question though. You said these cook up really fast. I didn't see

any cooking in the directions. At what point to you cook them.?
