I really enjoy strawberry and rhubarb jam. I live in Northern Illinois and we are fortunate in having a wonderful place called the Lambs Farm. They provide a help and a work place for people with disabilities. Since Breakfast is the most important meal of the day, they say, I thought a great question would be to ask........... " What do you like to eat for breakfast? It has a tendency to be one of the few non meat meals of the day. I'm going to try to eat a vegetarian meal once or twice a week. I'm getting side tracked. My breakfast is usually: a serving of egg whites a serving of hash browns onions/mushrooms/green peppers low fat shredded cheese salsa of choice. after cooking the individual things to how I like them, I mix them all together and top with salsa. I have to say my all time favorite would have to be pancakes with Vermont maple syrup. My second favorite is biscuits with strawberries. Steph 8:00? 8:25? 8:40? Guest guest Posted June 25, 2007 Report Share Posted June 25, 2007 I usually have a green smoothie with either: 1 banana, 1 c blueberries, 1 carrot, 3-4 c spinach and 1 tbsp ground flax, or 1 banana, 7-8 strawberries, 1 wedge of cantaloupe, 1 carrot, 3-4 c spinach and 1 tbsp ground flax. Or I'll have some steel cut oats with blueberries and a banana cooked up with them. Or just a few pieces of fruit and some nuts. Occasionally, I'll ahve scrambled tofu with lots of veggies and spices. But yesterday I have an apple and a couple of slices of veggie pizza (extra sauce, extra veggies, no cheese). Guest guest Posted June 25, 2007 Report Share Posted June 25, 2007 Wholegrain sourdough bread with homemade soy yogurt + tomatoes, or multigrain cereal or oats cooked in the rice cooker with soy milk, brown sugar & cinnamon. You can program the fuzzy-logic rice cooker to have a batch of cereal done just at a specific time (first thing in the morning after soaking all night) or make a lot and keep it in the fridge, so it can be quickly zapped in the microwave for snacks too. There's a really excellent Chocolate waffles recipe on Mollie Katzen's site: http://www.molliekatzen.com/recipes/recipe.php?recipe=chocolate_waffles During the week, I like variety so might have one of the following: granola, instant oatmeal or other cereal, toast or english muffin with peanut butter, bagel with cream cheese, crumpets with lemon curd, with a tea or coffee and most of the time in the summer I just have fruit(quite often watermelon) or a fruit smoothie. I like sweet things for breakfast; so sometimes I end up having cookies(if we made some the night before) or very occasionally a chocolate croissant or a danish. Guest guest Posted June 28, 2007 Report Share Posted June 28, 2007 Here are some of our favorites. We like waffles for breakfast. I just stir it up and pour into our 6 mini Heart shapped waffle iron. They come out so pretty and crispy. I spread them with fresh ground peanut butter and then top that with either waffle syprup or apple sauce. Sometimes I slice up bananas on it. Frozen strawberries, thawed or fresh ones with a little sugar on them and let set until they make some syrup is another great topping we enjoy with some whipped topping on that.. Baked Morningstar Farms Breakfast strips of Breafast Links We also love a Fried Egg Sandwich. We use the English Toasting bread, which is extra crispy when toasted. We toast it and then spread with Mayo or Veganaise, and fry the egg, spreading out the yolk well over all of the white and sprinkling it with a little salt and some Baco's. Sometimes I sprinkle it with Tony Chachere's on the egg where it is finished cooking too...... Yumm I love WW toast with crunchy peanut butter and banana slices. I like Donna's idea of using a WW Burritto shell spread with Crunch PB and wrapped around a whole banana Love Kashi Go Lean Cereals with Better than Milk Soy Milk. Add fresh fruit of choice. Oatmeal with Trail mix or fruit(dried or fresh) and maple syrup and Peanut Butter stirred into it Vegetable Omlets, Baked Fries and fresh fruit Smoothies Yogurt and Bare Naked Granola stirred together. Add fresh fruit. Grits, with shredded cheese, diced tomatoes, diced onions and some steam fried potatoes stired together on plate.. Baked Breakfast strips or Breakfast links by Morningstar Farms. Left Overs from another meal Fruit Salad, boiled eggs and buttered toast Cinmonan Toast and apples slices with crunchy peanut butter to dip it in Celery stuffed with crunch peanut butter and raisens pressed into the peanut butter Cashew butter on Cinamon Raisen Bagels, steam fried potatoes and fruit. Toast spead with Mayo, browned slice of Wham, Fried Egg, and tomato slice. Juice Biscuits, Mustard and Mayo mixed together, fried egg, and Morningstar Farms Breakfast Patty. Make a sandwich with it.
