Anybody else having this problem? With temps in the 90's my oven is

crying out to having something baking in it but can't do it.

I am not going to turn on that air conditioner when it is not even July

yet. Our two hottest months are yet to come.

I have an old cookbook " Best of Cold Foods " that has some simple ,

wonderful cold soup recipes.

Today I am making an avacado-cucumber soup.

I know cold soup is not a favorite of many but if anyone would like a

good cold soup recipe let me know and I will post.

In the summer, I pull out my toaster/oven and do my baking in that.

Broiling, too. It doesn't heat up the kitchen/house and I can enjoy

baked/broiled foods.

West Texas is cooler than usual this year and still doing a great

imatation of the southwest corner of you know where!

Would love some cold soup recipies.

I've been experimenting with solar cooking. Here's a link to the

I made the windshield shade one, simplest, cheapest and so far have

done soups and veggies just fine. brown rice didn't come out- probly

should hve started with boiling water, but white rice cooked fine.

haven't tried baking yet.

mmmmm.... please post the avo-cucumber soup recipe!! Sounds like it

Thanks for posting those cold soup recipes. I've been wanting to try a cucumber

soup and also borscht but didn't have any recipes. Now I do. YAY!

 

Today I went to a little restaurant called Pita Pete's. Didn't have meat

today and I didn't really miss it. I love all the veggies i can get. So my

pita had: mushrooms, cucumbers, alflafa sprouts, black olives, black beans,

pickles, shredded lettuce, baby spinach, tomatoes, cucumber sauce and cheese. I

still over ate since I ate the whole thing but it still tasted delicious.

I do most of my " baking " and " cooking " in my rice cooker this time of

year. It doesn't heat up the kitchen like the oven and it uses a lot

less electricity.

 

I am still experimenting with various dishes and cakes. Just a few more

tweaks and I'll have it right -- I have to do this when my husband isn't

around, he doesn't understand the concept of experimenting in the

kitchen, especially when I end up throwing away the end product.

 

I also plan on using the pressure cooker that I've had for a few years,

and never used because I don't know the first thing about them. I've

heard that they're quick, easy, and don't heat up the kitchen.

What brand of toaster oven do you have? I've had two different types

over the years and they were about worthless. They couldn't even toast

bread properly, never mind try to bake or broil something in them. I

ended up going back to using a regular two slice toaster.

I will have to check. I cook biscuits, cakes, baked potatoes, and broil all

sorts of vegetables and Kebobs in it. I will let you know!!
