Guest guest Posted June 28, 2007 Report Share Posted June 28, 2007 Quick Cold Borscht 1 (16 oz) can diced beets with liquid 1 cup veggie broth 1 pint (2 cups) sour cream 3 tablespoons vodka, if desired Salt and freshly ground black pepper 1/2 cucumber 1 red bell pepper 2 hard cooked eggs Snipped Chives Directions: Drain beat juice into large bowl. Set beats aside. Stir veggie broth, sour cream and vodka into beat juice Stir in salt and black pepper to taste Add diced cucumber and bell pepper and reserved beets to juice mixture. Refrigerate until thoroughly chilled To serve, stir in chopped hard cooked eggs or sprinkle on top if desired.
