Guest guest Posted June 29, 2007 Report Share Posted June 29, 2007 I made several packets up for the veg coworkers and myself for potluck, I cut them into bite sized pieces and placed in a mound in the center of rice, I had to chase the meat eaters off of them. They never even asked if they were meat or not, just started eating them. I think they are delicious. I know a couple people said they were too sweet or mushy but most said they were good so it is worth a try. We do have a yummy recipe for pulled p*rk that uses seitan and we all love it. I have done many vegetables this way, vegetable kebabs with a marinade or source is really delicious and easy, and then you can stuff large mushroom and grill them too. Just one example Coal-cooked rosemary and vegetable nests Serves 6 Ingredients 170g/6oz mangetout, topped and tailed 170g/6oz french or runner beans, cut into 5cm/2in slices 170g/6oz mushrooms, sliced 6 cloves garlic, peeled and left whole 12 cherry tomatoes, halved 6 tbsp olive oil salt and pepper 6 sprigs rosemary crusty bread, to serve 6 x 30cm/12in squares heavy duty foil Method 1. Turn up the edges of the foil to form 'nests'. 2. Share the vegetables equally between the pieces of foil. Drizzle each with olive oil and season well. Top each pile of vegetables with a sprig of rosemary. 3. Fold over the edges of the foil tightly to make a parcel and place over the coals. Cook for about 20-25 minutes, turning the parcels over occasionally. 4. Serve in the 'nests' with crusty bread for each person to soak up the juices left in the bottom. Alternatively, use a selection of baby root vegetables (beetroot, carrots, parsnips, etc) or new potatoes, and cook in the same way. Be a better Globetrotter. Guest guest Posted June 30, 2007 Report Share Posted June 30, 2007 This is one of my favourites, and is delicious at a barbeque Oriental vegetable kebabs with peanut dressing Serves 4 Cook these veggie kebabs on the barbecue or under the grill. If you're short on time use teriyaki sauce instead of the marinade and ready-made satay sauce in place of the dressing. Ingredients 1 red pepper, de-seeded and cubed 1yellow pepper, de-seeded and cubed 12 cherry tomatoes 4 salad onions topped, tailed and cut into 5cm/2in lengths 2 baby courgettes, cut into chunks groundnut oil or sunflower oil, for grilling 4 kebab skewers basmati rice, to serve For the marinade: 2-3 tbsp soy sauce 1garlic clove, crushed 1 tsp sugar pinch of ground ginger salt and freshly ground black pepper to taste For the dressing: 1 tbsp groundnut or sunflower oil 1 shallot, finely chopped ½ tsp hot chilli powder 1 garlic clove, crushed 1 tbsp dark brown sugar 110g/4oz unsalted roasted peanuts, ground 150ml/5fl oz coconut milk ½ lemon, juice only Method 1. Mix all the vegetables together in a bowl. Combine the marinade ingredients and pour over the vegetables, making sure the vegetables are evenly coated. 2. Cover and leave for 2 hours, stirring occasionally. 3. make the dressing: Heat the oil in a small pan and fry the shallot until starting to brown. Add the chilli powder and cook for 1 minute. 4. Stir in the 2 tbsp of the marinade from the vegetables,the garlic, sugar and ground peanuts. Stir well. 5. Add the coconut milk a little at a time. Bring to the boil and simmer gently for 2 minutes. Stir in the lemon juice and season to taste. 6. Thread the marinated vegetables on to skewers. Brush with a little oil and grill over the coals for about 15 minutes, turning occasionally. 7. Gently re-heat the peanut dressing. 8. Serve the kebabs on a bed of rice, drizzled with peanut dressing. Fussy? Opinionated? Impossible to please? Perfect. Join 's user panel and lay it on us. No, veal is not included in my list as this was something I refused to eat from an early age on moral grounds. However, what is a good substitte for lard? Is there a vegetarian equivalent. One of the things that I do miss are butteries and lard is a component of them. I didn't really miss thm until tendermoon asked that question and now I have a craving for that salty artery clogger. There are certain things that we both still crave that I cook -- BBQ beef ribs and chicken being at the top of the list. My sister and her husband are the same way, eating meat once a week or so. My sister and I were brought up vegetarian, but our husbands were not. My sister and I both like various meat dishes, having eaten them at non-vegetarian family and friends' homes while growing up. My husband would never become a full-time vegetarian, but compromises with me on limiting meat to 1 or 2 meals per week. That's a pretty good compromise for someone who had never heard of Loma Linda or Worthington meatless products. Tina M. You can do potatoes (awesome!) and squash (yet to try my own but have tasted some smoked squash soup once and it was sooo good). That might give him an outlet for that slow cooking he's missing. [...] I concur. Before I started watching my sodium, this was a great veggie option. We have a local place called the Muddy River Smokehouse that has blues entertainment and a bunch of down-home barbeque food. The inside is decorated as though you were out on a patio or something. Neat atmosphere.
