I guess I'm constantly creating something in the kitchen to eat that the day I became veg I never looked back and missed any of the old things I ate. Guest guest Posted June 30, 2007 Report Share Posted June 30, 2007 Since I became 99% vegan last November I occasionally miss parmesan cheese and no substitute will do so I have just had to be strong and also to stop eating pasta dishes because the absense of parmesan would be too noticeable. I have to admit to having cheated by buying the odd cappuccino - I tried it with soya milk and thought it disgusting. Guest guest Posted June 30, 2007 Report Share Posted June 30, 2007 My mom still reminds me (after 32 years as a vegetarian) that my favorite dish as a kid was standing rib roast as she prepared it. However, what I loved about that was the fat, garlic, and salt, so I can easily sub many foods for that meal. In fact, I looooove hummus (fat, garlic & salt) way more than I used to like rib roast. I miss cheese the most. No cheese substitute does it for me plain or in a recipe so I cheat (who am I cheating?) and use a soy product that has some whey in it; it's very bland but I usually have it with tomatoes and greens and mustard, so I get the texture I " need " as well as a good protein source. Guest guest Posted June 30, 2007 Report Share Posted June 30, 2007 I miss ricotta cheese. I can make do with the almond mozzerella and fake parmesan, but I can't do with out ricotta. Someone posted a ricotta substitute made from sunflower seeds that is quite tastey, but it doesnt' taste like ricotta.
