We made the basic pizzelle recipe out of half of the batter and added mini chocolate chips to the other half. They can be flavored with anise, orange, vanilla, almond and I guess whatever else strikes your fancy and can be shaped into cones or bowls while still warm to hold ice cream or fresh fruit...really very versatile....light, crisp...heavenly...a nice summer dessert. I was hooked, and today I ordered a refurbished Cuisinart pizzelle maker for only $15.00 from Amazon. Well, they do take time to make since you can only do two at a time, but my daughter did half and I did the other half and we were done very quickly even with doubling the recipe. Each one takes less than a minute. This recipe is from the Cuisinart recipe book that came with the pizzelle maker. They're all pretty much the same I think. 1 3/4 cups all purpose flour 2 tspns. baking powder 3 large eggs 3/4 cup granulated sugar 1/2 cup butter, melted 1 tablespn. vanilla or anise extract Place the flour and baking powder in a small bowl and stir to combine, reserve. Place eggs and sugar in a medium bowl. With a hand mixer (we used a whisk and it worked fine) mix on medium speed for one minute until mixture is thickened. On low speed, add the melted butter and vanilla in a steady stream and mix until combined. Add the flour mixture and mix until just combined. Maybe mine wasn't as good as yours. It's funny you should mention the pizzelle maker as I had thought of mine only a few days ago and hadn't thought of it in several years!
