Guest guest Posted March 8, 2003 Report Share Posted March 8, 2003 I have been eating quite a bit of spaghetti squash lately. I have a microwave recipe that I have been using. It says to pierce the squash all over with a fork. Roll in paper towel and put in the microwave. Cook on HIGH for 5 minutes. Turn and cook for a minute or two more. Let cool a bit so you can handle it. Cut it open and scoop out the seeds. Pull all the " spaghetti " out and put it in a pan with a bit of olive oil and garlic. Saute for a few minutes. Top with an alfredo sauce or some tomato sauce. Being that I am Somersizing, Suzanne Somers has a great alfredo sauce in her Fast & Easy Cookbook where you reduce a lot of heavy cream, add some butter and parmesan cheese and put it over the spaghetti squash or whatever. Remember in Somersizing, it isn't the fat that matters. It doesn't put the fat on you. If you combine it with carbos then you gain weight. If you just eat it by itself, with some vegetables, you are Legal. I love spaghetti squash. This is also good on julienned zucchini too. You'll want to check it periodically to make sure it's not getting burnt, but if you make sure to put water in the pan, you should be fine! You can also make spaghetti squash in the microwave. I've not done it that way myself, but I know it can be done. It's good with spaghetti sauce. It's also good with butter, salt and spices like basil or oregano. Spaghetti squash is one of my favourites. I can cook and eat an entire one in 3 days (not good, cuz I don’t eat anything else, and it’s not a very balanced meal plan for half the week!) They made an excellent 'potato pancake". Similar to the zucchini recipe, except they added grated cheese. Guest guest Posted August 15, 2008 Report Share Posted August 15, 2008 You can either bake it or cook it in the microwave oven. I use the microwave as it takes 45 minutes approximately to cook it. You can get pictures of what to do to it on an Internet search. You poke holes in it with a knife to let the steam escape. When cooked, you cut it in half, remove the seeds and strings, and rake it with a fork, and strands like spaghetti will come off of it. I like it with a good spaghetti sauce or with garlic butter.
