hi, anita,

 

spaghetti squash is a great low-carb " pasta " -- we can treat it like pasta -

toss with pesto -- or we can treat it like beans sprouts or julienned veggies,

in a wrap or salad. I'll look for more recipes later today. -- in mc format.

For now...

 

 

Slice the squash in half lengthwise and scoop out the seeds.

 

Microwave squash (cut sides up), loosely covered, on High approximately 15

minutes or until tender. Comb out strands with a fork; keep warm in a covered

casserole dish.

 

Bake squash (cut side down ona buttered tray, 30 minutes at 375F. Cool for 10 to

15 minutes. Comb out strands.

I have been eating quite a bit of spaghetti squash

lately. I have a microwave recipe that I have been

using.

 

It says to pierce the squash all over with a fork.

Roll in paper towel and put in the microwave. Cook on

HIGH for 5 minutes. Turn and cook for a minute or two

more.

 

Let cool a bit so you can handle it. Cut it open and

scoop out the seeds. Pull all the " spaghetti " out and

put it in a pan with a bit of olive oil and garlic.

Saute for a few minutes.

 

Top with an alfredo sauce or some tomato sauce.

 

Being that I am Somersizing, Suzanne Somers has a

great alfredo sauce in her Fast & Easy Cookbook where

you reduce a lot of heavy cream, add some butter and

parmesan cheese and put it over the spaghetti squash

or whatever. Remember in Somersizing, it isn't the fat

that matters. It doesn't put the fat on you. If you

combine it with carbos then you gain weight. If you

just eat it by itself, with some vegetables, you are

Legal.

 

I love spaghetti squash. This is also good on

julienned zucchini too.

 

 

 

It is delicious.

You'll want to check it periodically to make sure it's not getting

burnt, but if you make sure to put water in the pan, you should be

fine! You can also make spaghetti squash in the microwave. I've

not done it that way myself, but I know it can be done. It's good

with spaghetti sauce. It's also good with butter, salt and spices

like basil or oregano. Anything you would use on pasta is good on

spaghetti squash!

I can't salt my foods though.

 

So I just use herbs and spices.

a pan and put the squash in cut size down, then cover with aluminum foil

so that the steam stays in. After about 45 minutes at 350F a large

squash is done. Let it cool a bit, then scoop it out. If you use a

fork it’s easiest to break the strands up. I generally just serve it

with a little butter and freshly ground pepper, but it’s also good with

any kind of sauce you’d use on pasta.

 

My mother used to make a meatloaf, fill the depression in the middle of

the squash halves with it, cover with foil, and bake that way. It used

to gross me out, cuz then the meat juices got into the squash, however,

it might be good with a veggie un-meatloaf done that way. I haven’t

tried it, but it’s an interesting thought.

 

Spaghetti squash is one of my favourites. I can cook and eat an entire

one in 3 days (not good, cuz I don’t eat anything else, and it’s not a

very balanced meal plan for half the week!)

Believe it or not, I was in a supermarket a number of years ago and they were cooking with spaghetti squash. They made an excellent 'potato pancake". Similar to the zucchini recipe, except they added grated cheese. It was very good and the demonstrator said you could add any type cheese you wanted and serve with apple sauce, spaghetti sauce, or whatever sauce goes with the meal

Oh yes, I have heard of it and seen recipes but never tried it.

 

I will look out for one though I do not think I have seen one.

 

It looks and sounds similar.

The picture I sent previously is something that is sometimes called a

spaghetti squash (over here). I think what I do with that is something

similar to your marrow recipe that you mentioned (sort of).

 

I cut the squash in half and steam both or place in the oven as you

mentioned. It moistens the fibers (?) and they become loose (looking stringy

and I suppose like mini spaghetti pasta - as per the name). You can then add

butter and herbs or add a marinara sauce to it.

 

Your mixture sounds a bit more intriguing and exotic though. lol.

Yep ! I like it and most kids are facinated by it. I just bake it

too if you are not Vegan. Return the seasond insides to the squash

shell . It makes a nice serving dish.

You can also bake it, scrape it out, add a couple of eggs, some onion, salt,

garlic, pepper, and fry them - with or without breadcrumbs. They are

delicious!!

pepper and butter/Smart Balance. A sprinkle of parmesan cheese is nice

too if you are not Vegan. Return the seasond insides to the squash

Maybe it was the spaghetti sauce the ruined it. I like most any other kind of

squash. I will try it again and not try to make it be something it isn't.

I have never had Spaghetti Squash. What is the best way to cook it??

You can either bake it or cook it in the microwave oven. I use the

microwave as it takes 45 minutes approximately to cook it. You can get

pictures of what to do to it on an Internet search. You poke holes in it

with a knife to let the steam escape. When cooked, you cut it in half,

remove the seeds and strings, and rake it with a fork, and strands like

spaghetti will come off of it. I like it with a good spaghetti sauce or

with garlic butter. It is delicious and very low on calories.
