Guest guest Posted July 8, 2007 Report Share Posted July 8, 2007 i am so frustrated right now i needed to vent! ok so i am trying to make an icing for gavin's cake. i made the cake ... a banana sugar free cake. also dairy free since we are doing that now. anyway i planned to make a vegan cream cheese icing to go with it which was sweetened with apple juice concentrate. i got the tofutti cream cheese and was getting it out to make it when i realized the 2nd ingredient after water was hydrogenated soybean oil! this is exactly what i'm trying to avoid by making stuff myself, duh! so then i went to my backup which i bought just in case that didn't turn out, tofu made about the same one. i bought a silken and a firm one since i had never worked with it before. i blended the silken up and it was too thin so i added some of the firm and now it is all lumpy and will NEVER work for icing, i just threw it out. after that i realized on the package it said July 04!!! i am hoping that meant the 4th of July but at this point I'm not sure! so now i'm mad and frustrated and don't ever want to buy any of those vegan products again!!!!!! Guest guest Posted July 8, 2007 Report Share Posted July 8, 2007 Rachel, This recipe is far from being Vegan and even some Vegetarians might frown at it but try this..1 cup of milk chocolate chips melted, add 1 cup sour cream. This makes a smooth creamy 'frosting'. Just plain sour cream- 1 cup with 2 tab. powdered sugar makes a lovely, smooth vanilla type 'frosting'..Tastes a little like cream cheese. I think you could probably flavor it with vanilla or almond flavoring. Some times things just do not work out and you have to try again. You could also 'frost' your cake with one of the pudding recipes on file. I think my vanilla Tapioca pudding is great. The chocolate one is too and both are made with soy milk. And I need it white but I guess white chocolate would work for that. Thanks I feel better now that I got it out! It did not taste anything like whipped cream but it was just as good. I would presume you could make a frosting out of that. I do not know the exact recipe.
