Terrific Thai Stir Fry

 

5 sliced carrots

4 stalks celery, sliced

3-4 Jerusalem artichokes, sliced

1 cup shittake mushrooms, fresh or rehydrated

2 large onions, sliced

1 2-3 inch piece ginger, minced

2 cups mung sprouts

1 cup snow peas

12 cloves garlic, minced

1 can baby corn

2 cups broccoli

1/2 cup oil

1-2 Tbsp. toasted sesame oil

2 tsp. Thai curry paste

1 tsp. turmeric

 

2 cups steamed greens

1 cup shredded coconut, unsweetened, powdered in coffee grinder

 

Saute carrots through turmeric on list at high heat. Blend steamed

greens in blender. You may have to add water. When veggies are

sauteed, add coconut and blended greens. Serve on bed of basmati rice

with cilantro leaves and toasted sesame seeds on top.

GB, This looks like the same ingredients that I had recently in a

Thai restaurant. I just loved the flavor and was hoping to find the

ingredients, especially the herbs and spices.

I suspected that it was ginger that gave it that distinctive hot

spicy taste but could not identify some of the other flavors. This

was my first taste of Thai and I loved it.

I will sure try the combination listed in your recipe. Now to find

that Thai Curry paste.

I got mine at a ethnic/gourmet type store in Anchorage. I think Fred

Meyer also has the same type in their stores in the gourmet section.

I don't know if Fred Meyer has stores that far east though.

You got it in Anchorage?!? I tried the Abbot Freddies that has the biggest

oriental section and they don't have it. I will have to wait till tomorrow to

try Sagaya.

I got mine at New Sagaya. Fred's has 2 sections for oriental/ ethnic

food. One is in the regular aisles by canned food. The other is in a

separate aisle. These are more gourmet/ethnic foods. Most Fred's has

them in a section behind the health foods. I think Fred's on Abbott

has it there also but I am not sure. About a year ago, they even had

black salt. I have not seen it there for awhile though.

I did not go looking for it, I called and was told they don't carry it. I may

cruise by and look for myself before I head for Sagaya.

What part of anchorage do you live in? I am on Lower Hillside.

I live in Wasilla but probably go to the Abbott store as much as any

other Fred's in Anchorage.
