Curry Burgers

I've looked everywhere for a curry veggie burger recipe. My son

loved the ones Trader Joes sold at one time, and I can't find Dr.

Praegers Bombay Burgers anywhere. You don't have a recipe in

the files either.

 

So does anyone have a tried and loved curry burger recipe? I'm

not big on curry, but my husband and son love it, so I'm willing to

make some things for them and freeze it in individual portions.

You can take a burger recipe from the files and add

curry powder. That should work perfectly.

There's this gourmet burger place I know of that serves an Eggplant Curry Crunch

burger on your choice of patty... and yes, one of those choices is a veggie

burger :)

 

They basically use a very simple curry sauce made from yogurt, curry powder,

pepper (cayenne, black, white, pick your favourite) and salt. I've experimented

a little and came up with the following: for 1/2 a cup of yogurt (you could use

sour cream) start with a teaspoon of medium hot curry powder. Taste it and add

more to it if you feel the need for heat :) Finish it off with a pinch of salt

and a pinch of pepper (I usually default to freshly ground black pepper).

 

This is a really quick and easy sauce for all sorts of other stuff too...

including asparagus, spaghetti squash and other resister veggies ;)
