This is a pure comfort dish. Just add a small salad

and this is a

great dinner.

 

" Hungarian Noodles with Cabbage and Vegetarian

Sausage "

 

8 oz. wide egg noodles (yolk free is desired)

6 vegetarian sausages (Morning Star or Boca, etc.)

3 Tblsp. olive oil

1 onion thinly sliced

1 small head of cabbage shredded (packaged cabbage

mix is fine

also)

3/4 cup vegetable broth

2 Tblsp. chopped parsley

dash paprika

dash of red pepper flakes (optional)

1 Tblsp. poppy seeds

 

Boil noodles according to package directions, cook

until just

tender, drain and set aside (keep them warm).

While noodles are cooking. In a large wide skillet

heat 1 Tbslp. oil

over medium heat and add sausage and cook turning

often until browned

about 7 mins. transfer to a dish. (keep them warm).

Add onion to skillet with 2 Tblsp. oil and cook

stirring often

until golden about 8 mins.

Stir in broth and cabbage, cook stirring off ten until

cabbage is

wilted and starting to turn a light brown about 10

mins.

Cut sausage into 1/2 inch rounds, place on top of

noodles. Add cooked

vegetables and toss. Sprinkle with parsley, poppy

seeds and paprika

and also red pepper flakes if desired. Serve hot.
