The biggest set back I keep finding are recipes that make for a small army. I live alone, and while I like left overs, I don't like to eat anything for a week, and my freezor is screaming NO MORE! I can't eat bread or pasta so sandwiches and all the various pasta yummies are out. I have become quite the cookbook wh*re in the past year, but sizing things down doesn't always work well, if my skills allow me to try that. So...I am looking for suggestions for websites, cookbooks, etc for good healthy recipes for cooking for one (Or even two for a days leftovers). I'll even take recipes if you have something tried and true that you would like to pass along. I appreciate any help I can get in this and so would my tummy! Guest guest Posted July 13, 2007 Report Share Posted July 13, 2007 Laura- I too am single and face the same challenges. I probably eat like a single person as well though (not complete meals). I am Italian so of course there is always the pasta, but I also eat a lot of just veggies. I love sweet potatoes, so that's what I had for dinner last night with a grilled cheese sandwich. I know it's not gourmet but it had been a long, hard day! I try to scale things down, eat a lot of fruit and salads. But I love to cook so will put a scaled down recipe together when I just can't take eating like that anymore. I will look through my tried and trues and see what I can pass along.
