Dear Karen in San Diego (btw you live in a really

great city, was there once a few years ago during

December and had a wonderful time. We even considered

moving there but then immigration was too much

trouble. We ended up in Vancouver which is also a

great city. ;-) But the weather ain't near as nice.)

 

The recipe is included below. I made these tonight

after making my own Old Bay seasoning. (A small jar

of ground mace cost me $7.49Cnd!!! Outrageous!)They

tasted wonderful but I had a bit of a problem with

keeping them held together. I don't know if an

additional egg would help or not but if anyone has any

ideas, I'd be glad to hear them. But they tasted

really good and they are " Ken " approved too which

means they must have been really really good. Ken is

my meat eating husband who only gets served meat when

he eats out. ;-P If he likes a veggie dish, then you

know it's good because he usually finds them bland and

unappetizing most of the time. He actually throws a

lot of his meals out which drives me nuts.

anyways... here's the recipe

 

 

Connie's Zucchini Crab Cakes

From Allrecipes.com

 

Ingredients

2 1/2 cups grated zucchini (I dried them a bit with a

paper towel first)

1 egg, beaten

2 tablespoons butter, melted

1 cup bread crumbs

1/4 cup minced onion

1 teaspoon Old Bay Seasoning TM

1/4 cup all-purpose flour

1/2 cup vegetable oil for frying

 

Directions

1 In a large bowl, combine zucchini, egg, and butter

or margarine. Stir in seasoned crumbs, minced onion,

and seasoning. Mix well.

2 Shape mixture into patties. Dredge in flour.

3 In a medium skillet, heat oil over medium high heat

until hot. Fry patties in oil until golden brown on

both sides.

 

Makes 4 to 6 servings

I make them all the time, I use only a little bit of oil to brown

them, I don't find them mushy or gooey inside. If they are real wet

I add some breadcrumbs to combine them better.

I think the secret in the flavor comes from Old Bay seasoning.

The next day they are even better.

Where do you get the Old Bay Seasoning. I have never heard of it and the stores

here haven't heard of it either. Is it something you mix yourself?

It should be with the spices and if your grocery has a fresh seafood

dept, it usually is located in that section too.

 

Recipe sounds Delish!

Thanks, I willl check in the seafoods separtment. Grocery department never

heard of it.
