Also, you can use them in salads, side dishes or even a great veggie stir fry. If they are meant to turn a certain color (yellow, red, orange, black) it is very easy, they will start green, and then turn their color, so wait until they do get to be their color (all or ost green is gone), and normally they are ready to pick. If they are meant to be green, wait until they do not get any bigger, give it a day or two and pick. You just have to be sure that they get enough room, or the plants will not mature, bloom or bare fruit. They also are a magnet for sphids, if you have them. I use them to keep the aphids out of the rest of my garden and then just wash them down with dish soap and water once every two weeks or so to keep them healthy, too. Even in Alaska they grow.
