I tried the Black Bean and Corn Salad and liked that and that might be a choice but I'd rather try something new.. Any ideas..? It is one of those recipies that don't sound real good, but truely are. It is in the files under salads, listed as summer salad #2. I take it it pot lucks cause everyone loves it and it is so good us. I also serve it a lot at home cause it is so easy. Guest guest Posted July 20, 2007 Report Share Posted July 20, 2007 I made this for the first time last year for a family cookout. I was severly chastised for not making a larger bowl...laugh! This is really good and easy to make. My notes: I used regular mayo, as that was what I had on hand. Instead of the cole slaw shredded cabbage mix, I used a bag of Broccoli-Slaw. If there will be a lot of little ones, you might want to go easy on the jalapeno or omit it entirely. Cajun Cole Slaw 1/2 cup Veganaise 2 Tbs. Dijon mustard 1 Tbs. olive oil 1 Tbs. Sriracha chili sauce 1 tsp. Cajun seasoning 1 tsp. garlic salt 1 Tbs. red wine vinegar 2 Tbs. lemon juice 1 bag cole slaw shredded cabbage mix 1 jalapeno pepper, seeded and minced Put the mayonnaise and Dijon in a bowl. Beat together until combined. Slowly add the olive oil, whisking all the time, until the mixture is smooth and thick like the mayonnaise was. Add the chili sauce, Cajun seasoning, garlic salt, vinegar, and lemon juice. Place the cabbage mix and the jalapeno pepper in a large bowl and pour the dressing over all; toss well.
