The loaf recipes always make a good sandwich the next day. meatloaf doesn't stand a chance next to them. Guest guest Posted July 23, 2007 Report Share Posted July 23, 2007 Harry, I do chop the mushrooms and then saute them before adding to the patty mixture. A little cooked,mashed rice, bread crumbs, or an egg also works good to hold the mixture together. I've found that using onion, garlic powder and herbs works better than onion and garlic pieces. The more 'pieces' the more the patty crumbles. Also allowing the mixture to sit for several hours or overnight in the fridge allows the flavors to blend. I sometimes 'flour' my patties with a fine corn meal called Masa before frying in olive oil. The Masa makes a crisp coating. Also fry the patty in hot oil completely on one side before turning. Turning only once. Experiment with your favorite herbs and spices. In my patty recipe I use Tamari or sometimes the mild Jalapeno Tabasco sauce. I add ground nuts to my recipe. Ground nuts (almost powdered)make a very tasty addition. I would suggest toasting the nuts as this adds to the flavor. It is the nuts and mushrooms that give the patty it's 'burger' texture.
