I HATE mint so I can;t help you there. I use cilantro

in place of parsley in almost every recipe that calls

for parsley. I add it chopped to cooked rice, to

salsa, layer it in sandwiches, garnish soup, put in a

burrito, cover the top of enchiladas before I bake

them, add to salads, add to bean burgers, toss roasted

or boiled potatoes with it, I add to beans while

cooking and then garnish them with it. Why I think I

love cilantro!

I have very good luck with growing cilantro in a pot

on the porch.

Amy I have found that cilantro won't bolt if you plant it in the cooler weather

of spring and fall. It will bolt in the summer heat, just like my parsley does,

unfortunately. Don't you just hate that you can't grow it in the heat of

summer?

I bet you have cooler weather than some of us, since you live by the ocean. Do

you keep it in the shade? Our temps are in the 90's right now during the day.

In addition to what's already been mentioned, you could try making some

pesto with it! Use whatever recipe you like, but replace the basil with

cilantro. We like it with cilantro, olive oil, pine nuts, garlic and

parmesan cheese.
