Guest guest Posted July 24, 2007 Report Share Posted July 24, 2007 I HATE mint so I can;t help you there. I use cilantro in place of parsley in almost every recipe that calls for parsley. I add it chopped to cooked rice, to salsa, layer it in sandwiches, garnish soup, put in a burrito, cover the top of enchiladas before I bake them, add to salads, add to bean burgers, toss roasted or boiled potatoes with it, I add to beans while cooking and then garnish them with it. It will bolt in the summer heat, just like my parsley does, unfortunately. Don't you just hate that you can't grow it in the heat of summer?
