Go to the tempeh folder and try something mild like the no clam linguine recipe of mine. Take the block and steam it and this will plump it up. There used to be a little vegetarian cafe on the corner of the small town I lived in after college that had these on the menu. This was before I was vegan, and I was " addicted " to these things. Here is how they constructed it. Sandwich between rye bread some grilled tempeh (not sure if they steamed or nuked it first or not) with brown mustard on it, load up with some warmed sauerkraut and melted cheese. And either on the top of the cheese or just under (i.e., mixed w/the kraut) [i don't recall] would be the russian dressing. Toasted bread or not was left up to the customer, of course. I've not yet found tempeh or tvp in my town, but I've not had the $ to go to the health food stores, for actual hard searching. Reuben's have always been one of my favorite. Haven't used tempeh, but I may have to try that.
