A doctor from India that I worked for broght them in for all of that had to work on Christmas Day, one year. She also had chopped up a bit of hot pepper in it. It was delicious. After trying those potatoes and loving them, I've never stopped enjoying it on different things........ .. It is funny, because before this, I could not stand the smell of curry. After that, it is a pleasant odor to me. LOL Remember that a little of this goes a very long way. There are hot varieties of this and mild ones. When I add it to my homemade steam fried potatoes, I add it to the potatoes, when they are finished cooking. I just stir in a little bit and cook maybe a minute more..... Mainly I guess because we spent lots of time in Key West and curried goat was always on the menu at some of our favorite places to eat. So.....who has a good beginners recipe? Plus, the reviews for each recipe gave me loads of ideas. But....you are correct, most of the recipes had coconut in them.
