You will find a lot of support for the vegetarian lifestyle here and make some friends. I am Katie and I live in Alaska. I quit eating red meat 4 years ago, then dropped poultry and white meat 3 years ago. I still, very occasionally eat a bit of shrimp, crab or hallibut. but that is maybe twice a year. I love to cook Japanese food. Cabbage & Tofu Yakisoba and (Tofutti)Cream Cheese & Avocado rolls are my favorite. I really miss tonkatsu though. Do you have a vegetarian recipe for that? Next year, I will be studying for a year in Oyama, Tochigi Prefecture. Please let me know where the best restaurants are in Niigata and around the Tokyo area.
