It is like cinnamon toast, sans cinnamon, and then put in a bowl and eaten with milk. I still crave this when I am not feeling well. Quick and Easy Black Beans and Rice Serves 3-4 1 (5 oz) pkg saffron rice mix 1 (15 oz) can black beans 3 Tbsp fresh lime or lemon juice 1 1/2 tsp chili powder 1/2 tsp ground cumin 2 cloves garlic, peeled and minced Dash of hot saude or cayenne pepper ( optional) Cook rice mix according to package directions. Keep warm. Drain beans. Reserve 2 Tbsp bean liquid. Combine beans, reserved liquid, and remaining ingredients in saucepan. Cook over medium heat until thoroughly heated. Serve beans over rice. Can garnish with chopped green (spring) onions, sour cream, low-fat plain yogurt, or chopped cilantro. Enjoy! I couldn't pick just one, so here is my list: Scalloped corn Beans and cornbread Oatmeal with lots of butter and brown sugar Snickerdoodles with ice cold milk Homemade ice cream sammiches with oatmeal cookies and of course, chocolate This list is subject to change without notice.
