Guest guest Posted August 7, 2007 Report Share Posted August 7, 2007 Soybean Salad 1 cup cooked soybeans 1 small apple, diced 1/3 cup raisins 1 carrot, grated 1/3 cup minced onion 1 cucumber, thinly sliced 1 green bell pepper or any veggie you love.., thinly sliced 5 tbs. Tofu mayonnaise 1/4 tsp. Salt 1 pinch pepper 6 cups torn lettuce Combine soybeans, apple, raisins, carrot, onion, cucumber, bell pepper, mayonnaise, salt and pepper. So far I've only bought mine frozen but I find them at my regular supermarket.
