Veggie recipes that a beginner can make please?

Hiya everyone

 

I can't remember if I've introduced myself or not so just in case I haven't I'm

Mandy from Gloucestershire in England and I've been vegetarian for about 18

years.

 

Me and cooking have never been friends - I either under or over cook everything

I try and make even with my mum/mum-in-law showing me what to do! The closest I

get to cooking atm is making smoothies which even I can't mess up 'cos it

doesn't need cooking and I've got a smoothie machine where you literally put

everything in and turn it on then pour the smoothie out and drink it!

 

So, does anyone have any recipes that I could try out please? Oh yeah, I'm

allergic to dairy and I've got a fussy hubby who will only eat certain veggies

if he doesn't know they're in the recipe and they're well hidden. Off the top

of my head (and I've got a terrible memory) he won't eat mushrooms, celery,

cucumber and things like that.

 

Up to now I've lived on the same as meat eaters without the meat (so while

everyone else is having roast beef and Yorkshire puddings with veggies I'll have

everything except the meat atm which isn't exactly healthy!). I want to

surprise hubby with a home cooked meal that I haven't ruined 'cos I've never

done that for him and salads get a bit boring after a while.

 

Has anyone got any ideas pretty please?

Hi Mandy

Have you tried a slow cooker? It's so simple, toss in your ingredients in

the morning and by evening, it's all done, except for a side or salad. I've

invented many stews with tofu in mine, same a meat eaters only I use tofu

chunks that absorbs the flavor of whatever you add to it. Your hubby

sounds like mine, he swears he's allergic to all veggies except for

potatoes. I've scrambled tofu for him, added some cheese to it and told him

it was eggs .. So far he's not figured it out :)

 

Also I have fed him 'pork' riblets that I bought from the same company who

makes gardenburgers, perhaps you have something similar there. He thought

they were the same ones that McDonalds serves :)

Marcia that's a great suggestion for Mandy. I believe she should

start out with very easy, favorite recipes like spaghetti,stew or

chili until she gets the hang of it. We are discussing 'comfort food'

and when first preparing Vegetarian meals I think it best to stick

with ethnic or family recipes that we feel comfortable with.

I recently prepared a faux egg omelet using extra hard tofu crumbled,

faux sausage, green pepper and onion and my friend ate it and never

noticed that it was not real egg and sausage. I also made veggie

burgers and he thought they were warmed over meat loaf..LOL' And to

Mandy, as Marcia suggests ;

The crock pot is a great way to prepare easy , no hassle , no pot

Hi Mandy,

 

I always enjoy making a home made pizza. I like to make a flatbread

dough for the crust, but you can always purchase a pre-made crust

that is really good. I usually omit the cheese unless I am really

craving it. The best thing is you can get as fancy or as simple as

you like. I usually just use a basic speghetti or pizza sauce from

a jar, but I've actually used a stone ground mustard before as the

base for a chick pea and red onion pizza. Anything goes on a pizza!

 

Here is one of my favorites that my family really enjoys:

 

Greek Pizza (from VT complete cookbook)

 

Ingredients

1 12-14 inch pizza crust

1 cup of pizza sauce

1 tsp minced fresh oregano or 1/2 tsp dried

10-15 thinly sliced red onion rings

1+1/2 cups shredded low fat, regular or soy mozzerella cheese

1/2 cup crumbled feta cheese or goat cheese

2 plum tomatoes diced and seeded

1/3 cup chopped or sliced pitted black greek kalamata olives

 

Directions

1. Preheat oven to 450F

2. Prebake pizza crust if using fresh pizza dough. Remove from oven

and allow to cool slightly. Spread the sauce on the crust.

Sprinkle

the pizza with oregano, arrange the onion rings on the sauce and top

with mozzerella cheese. Sprinkle the feta cheese, tomatoes and

olives over the mozzerella.

3. Bake for 10-12 minutes, or until the cheese melts. Remove from

the oven and serve.

 

Note: I've always had to bake my pizza on the top rack or else the

bottom burns.
