Guest guest Posted August 8, 2007 Report Share Posted August 8, 2007 I have been thinking about making my grocery list and despite the dozens of cookbooks and printed recipes I am just not in the mood or don't know what I have a taste for so I thought I would ask the group. What is everyone eating these hot days when you are either cooped up inside or out at a summer concert? We have been having vegetable pizzas almost every week which is fun I cut up all the veggies and let everyone design their own pizza. I add thin slices of tomato to mine and skip the cheese. So fresh and yummy So far we have topped them with zucchini, tomato, garlic, spinach, orange peppers, onions.... Steph Moody friends. Drama queens. Your life? Nope! - their life, your story. Guest guest Posted August 8, 2007 Report Share Posted August 8, 2007 I usually get home just a wee bit before dark, so I go to the garden and look at what needs to be picked. Yesterday I was lucky, had a few green peppers, 3 types of summer squash, beautiful italian slim eggplants and lots and lots of tomatoes. I had to stop by the store and buy an onion, but other than that I had the ingredients for ratatouille, so this is what I made. Of course I also had a couple of nice little hot red peppers and I trew them in, even though it is not traditional to make it spicy, but hey, who is eating it right? I like spicy food. Tonight I will pick some of our kale (the type that has a purple vein and green leaves and does OK in the summer) and make something with Kale and oat groats. It will be somewhat experimental, a friend made it this way for us a couple of weeks ago and I liked it. I think I will also make a nice gazpacho to go with it (cold spanish tomato soup), and this will use some of out incredibly abundant tomato crop. Any of you in the LA area would like some tomatoes? Sometimes Hubby has his cold and I warm mine. I make a big dish of it so that there are lots of left overs for the next and next day. I love to cook (and eat!), so I keep expecting to get bored with the more simple stuff, but so far I'm still craving salads, berries and melons (and, umm, the vegan chocolate cherry ice cream I mentioned the other day--Yum!) Spicing up steamed veggies and ginormous pots of beans for salads one or twice a week seems to be all the cooking alchemy I need. Who knew? Except I'm more likely to want ice cream in the summer time. We eat a lot of salads with all kinds of veggies in it and use vinegar. Sometimes we'll cook a couple of the Boca or Morningstar Chik'n patties and then slice it up and put on top - then we'll use a ranch type dressing. Guest guest Posted August 16, 2007 Report Share Posted August 16, 2007 Since summer is the busy time of year at work, I haven't been much wanting to cook from scratch when I get off. I've been eating lots of veggie burgers. I could be a poster child for morningstar farms -- even my old-school-steak-and-potatoes father has been eating their burgers, according to mom. I top them with sauteed mushrooms and onions, or i mash avacado with a little garlic, lemon juice, and salt and top with a slice or two of fresh tomato.
