Pizzelles 6 eggs 1 1/2 cups sugar 1 cup melted butter, cooled 1 tablespoon anise extract or vanilla 3 1/2 cups cake flour 4 teaspoons baking powder Pinch of salt Beat eggs, add sugar gradually -- beat until smooth. Add cooled butter and anise or vanilla. Add flour, baking powder and salt -- beat until smooth. By teaspoons, place batter on pizzelle iron. Cook for about 40 seconds or until golden in color. As I don't care for anise flavoring, I only use vanilla. Also, while not traditional, the addition of some mini chocolate chips is a nice change. A whole lot. I was up to my ummmm armpits in pizzelles. LOL Off the top of my head I would say at least 50 if not more. I read somewhere that they can be frozen, but you'd have to have a large freezer I would think so they could have their own space. They're so delicate that I'm afraid you might end up with crumbs. If you put them in a tightly covered container they stay fresh a pretty long time.
