Mae Jean Cashew and Golden Raisin Cookies 1/2 cup butter, at room temperature 1/2 cup golden brown sugar, packed 1/2 cup granulated sugar 1 tsp. vanilla extract 2 large eggs 1 1/2 cups flour 1/2 tsp. baking soda 1/2 cup roasted, unsalted cashews, coarsely chopped 1/2 cup golden raisins Preheat the oven to 325 degrees. Beat the butter and sugar until light. Mix in the vanilla and then the eggs one at a time. Stir together the flour and baking soda, and then mix in to butter/sugar mixture. Mix in cashews and raisins. Roll the dough into 2-inch round balls. Place on a non-stick or parchment-lined baking sheet, spacing 2 to 3-inches apart.
