ahhhhh summer! Canning Hi you canners

Maybe someday I will try it, I have always been scared too. I just

don't have any idea on how to do it. I will get a book from the

locval library and read up on it.

I just learned how to use the crockpot cooker so I don't know if I

could can stuff. Is there a group for doing it?

I have recently begun pressure canning and it is really easy. The pressure

cookers come with very easy to read directions and I did it right the first time

and every time since. I make a big batch of soup and after dinner, if there is

enough left I can it for another meal. Foods do taste a bit different after

canning. It seems that they loose the spices, so they are a bit bland unless

salt is added again after canning.

Go ahead and try it.

Katie this confirms my observation when I made the first canned

tomato sauce (I made two quart jars to experiment and make sure the

canning process was sound). I spiced it the way I do regular

italian style sauce to use in lasagne, spaguetti, parmegianno,

calzone or dishes like this. You know, the standard, olive oil,

onions, lots of garlic, herbs from the garden (basil, marjoram,

oregano and a bit or rosemary plus several tens of pounds of

tomatoes). It was good, but a lot blander than I remember making

it. I simply added a little more salt and herbs to it but I

wondered why it came out so bland? thanks for sharing the

information.
