The pressure cookers come with very easy to read directions and I did it right the first time and every time since. I make a big batch of soup and after dinner, if there is enough left I can it for another meal. Foods do taste a bit different after canning. It seems that they loose the spices, so they are a bit bland unless salt is added again after canning. Go ahead and try it. I spiced it the way I do regular italian style sauce to use in lasagne, spaguetti, parmegianno, calzone or dishes like this. You know, the standard, olive oil, onions, lots of garlic, herbs from the garden (basil, marjoram, oregano and a bit or rosemary plus several tens of pounds of tomatoes). It was good, but a lot blander than I remember making it.
