Fast Creamy CKN Stew

3 Teaspoons EVOO

1 large onion chopped

5 carrots chopped

1 Quorn Trky Roast- thawed, chopped in chunks

3 cups Vegetable Broth

1/2 cup frozen peas

 

1. In a Cast Iron pan saute onion and carrots until tender in EVOO

2. Add the Quorn with the vegetable broth and bring to a boil until Quorn is

almost done then add frozen peas.

3. I like thick sauce so before it was done I removed some of the liquid from

the pan and add some cornstarch.

4. Add cornstarch mixture until it thickens.

 

We poured our Stew over a piece of Potato Bread but it would be wonderful over

a biscuit or roll.
