Apple, Carrot, and Walnut Salad

 

3 cup carrots, grated, shredded

2 Jonathan or Macintosh apple, washed, cored and diced

1/4 cup chopped walnuts

4 tsps. red wine vinegar

1 tsp. Dijon mustard

3/4 tsp. salt, optional

1/4 tsp. pepper

2 tbsps. olive oil

 

Combine carrots, apples and walnuts in a salad bowl.

Combine remaining ingredients in a jar with a

tight-fitting lid. Shake vigorously. Pour dressing

over salad and toss. Serves 4.
