Guest guest Posted August 16, 2007 Report Share Posted August 16, 2007 Melt-in-Your-Mouth Potato Muffins 1 tablespoon active dry yeast 2 tbsp. warm water 1/2 c mashed potatoes 1/2 c hot water 1/2 c sugar Combine and let rise until light and bubbly or spongelike. Add in 2 beaten eggs, 1/2 cup butter, a pinch of salt, and 3 cups of flour. Roll out and cut with small round cookie cutter. Place on greased cookie sheet. Let rise 30 minutes and bake at 350 degrees for about 20 minutes. Brush with melted butter and sprinkle with powdered sugar. Luggage? GPS? Comic books? Check out fitting gifts for grads at Search. I would like to try these, but need reassurance that the recipe is correct first. Guest guest Posted August 17, 2007 Report Share Posted August 17, 2007 Hi Katie- I used to watch my Granny make bread and I believe you use the two tablespoons warm water to mix with the dry yeast to activate it. Then ,mix it with the rest of the ingredients. Terry's potato muffins sound wonderful. As soon as this hurricane scare is over, I am goiing to try them.
