Guest guest Posted August 20, 2007 Report Share Posted August 20, 2007 I thought these sounded good when Deanna asked about them so I made some this evening. My omnivore husband absolutely raved about them. He said it has to be one of the best meals I have ever made. I sauted some brocolli, cauliflower, spinache, zucchini and carrot pieces and mixed in some ricatta cheese. I spread about 1/2 cup on each piece of cooked noodles and rolled the up. I put the end of each roll against the side of the pot. Becore I put them in a put in a layer of mushroom garlic tomato sauce and poured the rest over and around the rolls. I put a little mozzerella to melt on top. They were fun to make and did not even suffer when husband called to tell me he would be 2 hours late for dinner! I just turned them off cause they were done and turned them back on for half an hour when he was on his way. I am going to have to make these again. They certainly were a hit. Guest guest Posted August 21, 2007 Report Share Posted August 21, 2007 Yes! I agree. You sure can do those roll-ups in the crockie. I do it often, even in the winter. The crockpot is a working girl's best friend. *lol* They don't need too long to cook though... mine are usually done in 4 hours on low. I will make the roll-ups the night before, then load the crockpot in the morning and have my son turn it on about 4 to 5 hours before we want dinner ready.
