Guest guest Posted May 14, 2005 Report Share Posted May 14, 2005 Preparation time less than 30 mins Cooking time 10 to 30 mins Vegetarian Quick Recipe Ingredients 1 tsp olive oil 20g/1oz onion, chopped 1 carrot, chopped ½ small swede or ¼ large swede, chopped 284ml/10fl oz vegetable stock salt and freshly ground black pepper toasted bread and olive oil, to serve Method 1. Heat the olive oil in a saucepan over a low heat. Add the onion, cover with the lid and sweat three minutes. 2. Add the carrot and swede then pour in the stock. Cook for 12-15 minutes or until the carrot and swede are soft. 3. Take off the heat and liquidise the ingredients until smooth. 4. Season with salt and freshly ground black pepper to taste. 5.
