I just finished a backlog of 1400 messages that had piled up while I was busy getting kicked out of my house, was without home internet access for a while, just plain got sick of the internet for a bit, and so on. I'm starting to put recipes in my recipe program again and thought I would share. Just took this one out of the oven and had a nibble. Yum! And the house smells wonderful. Laura Applesauce Raisin Spice Loaf 2 cups flour 2 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon dried ginger 2 teaspoon cinnamon ½ teaspoon nutmeg ½ teaspoon allspice ½ teaspoon salt 1 cup raisins ½ cup margarine ¾ cup dry sweetener egg replacer, to equal 2 eggs ⅔ cup applesauce ½ cup soy milk 2 teaspoon vanilla extract Preheat oven to 350 degrees F. In a large bowl, sift together the flour, baking powder, and baking soda. Stir in the ginger, cinnamon, nutmeg, allspice, and salt. Stir in the raisins, margarine, sweetener, egg replacer, applesauce, soy milk, and vanilla extract. Stir together gently until " just mixed. " Pour into a lightly oiled loaf pan and bake for 55-60 minutes or until a toothpick comes out clean. Let cool on a rack for 10 minutes before removing from pan. Makes 1 loaf.
